Cheesy Crockpot Cowboy Casserole

Cheesy Crockpot Cowboy Casserole
- 1/4 cup diced onion
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tsp Mrs. Dash
- 1 lbs small red potatoes, sliced thin (about 4-5 small red potatoes),
- 1 can of cream of mushroom soup
- 1 lb ground beef browned and drained
- 1 can of diced tomatoes with liquid
- 1 cup canned corn, drained
- 1 can dark red kidney beans, drained
- 1 cup of shredded cheddar cheese

- Place all of the ingredients except the cheese in a 4- 6 quart crockpot and stir well.
- Cover and cook on high for 4 hours or on low for 7-8 hours. Uncover crock-pot and sprinkle shredded cheese over top and recover and let cook an additional 30 minutes.

- 1 cup canned corn drained
- 1 can dark red kidney beans drained

Made this today… used a can of Rotel instead of plain diced tomatoes, and a heaping teaspoon of Trader Joes 21 Seasoning Salute in place of Ms Dash. I also browned the onion with the beef. This was really good! I think next time I might add some garlic (because who doesn’t love garlic?) and Velveeta chunks during cooking instead of cheese on top at the end. I also like the idea of doing cream of cheddar instead of cream of mushroom… mmmm, cheese!
I put it all in the crock pot this morning but I forgot to stir!! Hope it turns out OK.
I made this yesterday & I want to thank you for the recipe. It was excellent! Substituted tomato sauce for tomatoes, but otherwise followed the recipe. Taking the last of it to work as lunch this today.
This was easy and delicious. I made this a couple months ago on the stove top because I did not want to wait for the crockpot. Turned out to be a good freezer meal. Everything held up nicely after it thawed and it still tasted great. Thank you for sharing the recipe.
Just threw this in the crockpot for dinner tonight. I added about a half can extra of cream of mushroom soup, red pepper flakes and chili powder. Also added a pinch of garlic and onion powder. Like a few other readers, I also used Rotel. It looks very hearty! Will update after dinner!
