How to Make Crockpot Artichokes

Artichokes have always been one of my favorite vegetables. Steamed artichokes are delicious, fun to eat and are super low in calories.  BONUS. This Crockpot Artichoke recipe takes all the guess work out of cooking them.  It was brought to my attention by a couple friends, that they had never even HAD an artichoke before.  WHAT?!  This is a crime! hehe

If you are an artichoke virgin, please don’t wait any longer. Give this yummy veggie a try. You can even dip it in butter, flavored mayo or aioli 🙂

How to Make Crockpot Artichokes

  1. First, wash artichokes. Trim each artichoke by cutting off stem at the base of the artichoke, and the top inch of the artichoke.
  2. Place trimmed artichokes in your crockpot. Brush the lemon juice over each artichoke.
  3. Next place minced garlic on top of each artichoke. Rub in with a spoon.3 images showing how to Trim the tip and bottom of artichokes
  4. Drizzle olive oil evenly over each artichoke top.
  5. Pour in 2 cups of vegetable broth.
  6. Cook on HIGH for 3-4 hours. My artichokes were medium/large and were perfect at 3 hours. So depending on the size of your artichokes, you might want to cook a little less or more.artichokes in crockpot, topped with with olive oil, garlic and broth

How to Make Crockpot Artichokes

Prep Time 10 minutes
Cook Time 3 hours

Ingredients
 

  • 4-6 large artichokes. I have a 6 QT oval crockpot and was able to five 5 large
  • 2 cups vegetable broth
  • 4-6 cloves of garlic minced
  • fresh juice from 1 large lemon about 2 TBS
  • 3 TBS olive oil
  • salt and pepper to taste

Instructions

    So I am currently cooking my artichokes right now. Are they supposed to turn brown? Did I do something wrong and will they taste the same if I continue to cook them? Not sure what to do here. LOL 🙂

    Perfect idea.

    I live on a ranch/farm, and recipes either need to be 20 minutes (got involved in a construction project or am butchering) or 4+ hours in The smoker/slow cooker. Someone came home with _7_ ‘chokes, we have two six quart units, I found your recipe so in they went. They’re large so I dont expect 4 hours to be extreme. Thank you!

  4. Never had cooking an artichoke difficulty until recently. I prepare them like I always have before, but now they are coming out hard and hard to eat.Are artichokes bad this year? Is the drought out west having an effect on them? Pls help before I invest another $1.95 (a piece) on them. TNX

  5. I strongly suggest clipping the tip of each leaf (1/4 to 1/2 inch) before cooking to get rid of the “pokers.” It’s a bit of a pain, but only takes a couple minutes per artichoke. Looking forward to trying the crockpot version of our family favorite. Thanks for sharing!
