The Best Crockpot Beef Stew

Beef stew has to be one of my ultimate comfort foods, especially during the winter months. And what goes better with Sunday football than a big ole’ bowl of beef stew!
Now, this isn’t any old stew. This has been proclaimed as The Best Crockpot Beef Stew by my friends and family. So add this recipe to your menu next week and let the compliments roll in.

The Best Crockpot Beef StewÂ
- 2 pounds beef stew meat, (cut into bite-sized pieces)
- 1 tsp Salt
- 1 tsp pepper
- 1 medium onion, finely chopped
- 2 celery ribs, sliced
- 2-3 cloves of garlic, minced
- 6 oz can tomato paste
- 32 oz beef broth
- 2 Tablespoons Worcestershire sauce
- 2 cups baby carrots carrots
- 4-5 small red potatoes, cut into bite-sized pieces (about 3 cups)
- 1 tablespoon dried parsley
- 1 teaspoon oregano
- 1 cups frozen peas
- 1 cup frozen corn
- 1/4 cup flour
- 1/4 cup water
- Combine beef, celery, carrots, red onion, potatoes, salt, Â pepper, garlic, parsley, oregano, Worcestershire sauce, beef broth, and tomato paste in the crock pot. I used a 6 qt crockpot for this stew. Â Cook on LOW for 10 hours or on HIGH for 6-7 hours.
- About 30 minutes before serving, mix the flour and the water together in a small dish and pour into the crockpot. Mix until well combined. This will add a nice thickness to the stew. Next add in your frozen peas and corn. Continue cooking covered for 30 minutes.

After scouring the internet super-highway for beef stew recipes that seemed to fall flat, I came across this one. The corn & peas looked like a nice addition to other recipes I had seen. After reading the reviews I decided to try out the 10 hour recipe.
Some people mentioned something about spice, I didn’t notice any. But what I did notice is a truly delicious meal. Hearty, wonderful flavor, the veggies were tender but not mushy, every chunk of beef like a prize for my mouth. The corn added a nice crunch and color to the dish. I’m a picky eater, so this is a great way for me to get my veggies.
It’s a lot of food though. It probably took me 3-4 days eating it twice a day to polish this beast off. You know it’s damn good when you’re not sick of the recipe after eating it that much. Bravo!
Is it the end of the world if i dont have any tomatoe paste??
Hahaha. No Jon. You do need a tomato-ish ingredient. What do you have on hand?
I have made this 3 times, and it is so good…I am not a fan of beef stew but this has turned me around. I am making it again today and realized I didnt have tomato paste but I did have a can of diced tomatoes. I blended the tomatoes, smimmered in a small pot for about 10 minutes, strained the water out of the “paste” and added it to the crock pot with everything else. Im sure it will be just as good, and it’s a great substitution when you are in a pinch.

This is so simple, can not wait to try it. This stew smells amazing.
So I rarely comment on food blogs but I made this a few weeks ago and my husband raved about it so I thought I’d come back and leave a comment. My husband will eat whatever I make but rarely is fully pleased (he’s hard to please when it comes to cooking) although he always has a good attitude about it. But he loved this dish. And now I’m making it for when his potential boss comes over for dinner because he liked it that much. You really won’t be disappointed with this recipe!
