The Best Crockpot Beef Stew

Beef stew has to be one of my ultimate comfort foods, especially during the winter months. And what goes better with Sunday football than a big ole’ bowl of beef stew!
Now, this isn’t any old stew. This has been proclaimed as The Best Crockpot Beef Stew by my friends and family. So add this recipe to your menu next week and let the compliments roll in.

The Best Crockpot Beef StewÂ
- 2 pounds beef stew meat, (cut into bite-sized pieces)
- 1 tsp Salt
- 1 tsp pepper
- 1 medium onion, finely chopped
- 2 celery ribs, sliced
- 2-3 cloves of garlic, minced
- 6 oz can tomato paste
- 32 oz beef broth
- 2 Tablespoons Worcestershire sauce
- 2 cups baby carrots carrots
- 4-5 small red potatoes, cut into bite-sized pieces (about 3 cups)
- 1 tablespoon dried parsley
- 1 teaspoon oregano
- 1 cups frozen peas
- 1 cup frozen corn
- 1/4 cup flour
- 1/4 cup water
- Combine beef, celery, carrots, red onion, potatoes, salt, Â pepper, garlic, parsley, oregano, Worcestershire sauce, beef broth, and tomato paste in the crock pot. I used a 6 qt crockpot for this stew. Â Cook on LOW for 10 hours or on HIGH for 6-7 hours.
- About 30 minutes before serving, mix the flour and the water together in a small dish and pour into the crockpot. Mix until well combined. This will add a nice thickness to the stew. Next add in your frozen peas and corn. Continue cooking covered for 30 minutes.

Just made this two days ago, and this was a very tasty homemade beef stew. I followed the recipe, and beef stew was even tastier the following day! i guess all the flavors melded even more. It really is the perfect thing to eat on a cold day (also one serving kept me full for about 5 hours). I plan on making this again this weekend.
Some reviewers said it was spicy, but I didn’t detect any spiciness at all. In fact, I’d like a little kick to it…. what should I add if I wanted to make this spicier? Thanks!!

Where can I get the nutritional info on this recipe? My doctor has me on a heart diet that is calorie counted so I need specifics on crock pot meals such as protein,carbs,sodium, calories,fats,etc.
Does it make a difference in the tenderness of the meat if you cook it on high 6-7 or on low 10 hours? I normally like to cook it on low but can’t wait 10 hours for it to cook? trying it today – getting a blizzard in the Eastern USA…
I made this today and didn’t have the time to cook it in the crockpot, so I browned the meat first, then added all of the other ingredients, except the peas and carrots to an 8 quart pot and simmered it for several hours, then added the carrots and peas, simmered for a while longer and the meat was extremely tender. I recommend you have some extra beef broth on hand just in case.
I made this for my family today, tweaking it here and there for our taste and they loved it. It was hardy and just what was needed on a chilly day. Thanks for sharing.
